Create a colorful, portable appetizer perfect for large gatherings like graduation parties. These antipasto skewers require no cooking and offer a variety of Italian flavors in one easy finger food.

Ingredients

  • 1 package (12 ounces) refrigerated tortellini, cheese or meat
  • 1 cup small fresh mozzarella balls (bocconcini)
  • 1 cup rolled salami slices
  • 1 cup mixed olives (pitted, green and black)
  • 1 cup cherry tomatoes
  • 1/2 cup marinated artichoke hearts, drained
  • 1/4 cup Italian dressing (your favorite recipe)

Instructions

  1. Cook the tortellini according to package directions. Drain well and rinse immediately with cold water to stop cooking. Toss the cooled tortellini lightly with 2 tablespoons of the Italian dressing. Let stand for 10 minutes.
  2. Prepare the other ingredients: Drain the olives and artichoke hearts. If the salami slices are large, cut them in half or roll them into quarters.
  3. Assemble the skewers. Thread the ingredients onto small wooden skewers in a repeating pattern to create a visual feast. A suggested order is: mozzarella ball, folded salami, olive, tortellini, cherry tomato, artichoke heart.
  4. Arrange the assembled antipasto skewers on a large platter.
  5. Just before serving, drizzle the remaining Italian dressing lightly over all the skewers for added flavor.
  6. Serve immediately as an easy party appetizer.

Notes

  • For extra flavor, you can marinate the mozzarella balls in a little olive oil and dried herbs for 30 minutes before assembling.
  • If you are making these ahead of time, keep the dressing separate and only drizzle it on right before guests arrive to prevent sogginess.
  • These skewers are a great make-ahead option for summer entertaining.
