  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup finely chopped apple (like Granny Smith or Honeycrisp)
  • 1/4 cup powdered sugar (for glaze)
  • 1 tablespoon milk (for glaze)
  • 1/4 teaspoon ground cinnamon (for glaze)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a mini muffin tin or line it with paper liners.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, 1/2 teaspoon cinnamon, and salt.
  3. In a separate medium bowl, whisk the egg, 1/2 cup milk, melted butter, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix; a few lumps are fine.
  5. Fold in the chopped apple pieces gently.
  6. Spoon the batter into the prepared mini muffin cups, filling each about two-thirds full.
  7. Bake for 12 to 15 minutes, or until a toothpick inserted into the center comes out clean.
  8. While the bites cool slightly, prepare the glaze. Whisk together the powdered sugar, 1 tablespoon milk, and 1/4 teaspoon cinnamon until smooth.
  9. Once the apple fritter bites are slightly cooled, drizzle the cinnamon glaze over the tops. Allow the glaze to set before serving.

Notes

  • For a crispier exterior, you can lightly spray the tops of the batter with cooking spray before baking.
  • Use firm, tart apples for the best flavor contrast against the sweet dough.
  • These are best eaten the day they are made, but you can store leftovers in an airtight container at room temperature for up to two days.
