Make this easy Bacon Cheeseburger Casserole for a satisfying, family-friendly meal. It captures all the flavor of a classic cheeseburger in one simple, cheesy bake.

  • 1.5 lbs ground beef
  • 1 cup cooked, crumbled bacon
  • 1 medium onion, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 (10.5 ounce) can cream of mushroom soup
  • 0.5 cup milk
  • 1 cup shredded cheddar cheese, divided
  • 1 cup shredded Monterey Jack cheese
  • 1 tablespoon yellow mustard
  • 0.25 cup ketchup
  • Optional: 1 cup crushed potato chips or cooked, crumbled bacon for topping

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and the onion is soft. Drain off any excess grease.
  3. Stir the salt, pepper, and garlic powder into the beef mixture.
  4. In a separate bowl, whisk together the cream of mushroom soup, milk, mustard, and ketchup.
  5. Add the soup mixture and half of the cheddar cheese and all of the Monterey Jack cheese to the skillet with the beef. Stir until combined.
  6. Spread the beef mixture evenly into the prepared baking dish.
  7. Sprinkle the remaining half of the cheddar cheese over the top. If using, sprinkle crushed potato chips or extra bacon on top.
  8. Bake for 20 to 25 minutes, or until the casserole is bubbly and the cheese is melted and lightly golden.
  9. Let the casserole rest for 5 minutes before serving.

Notes

  • For a Low-Carb/Keto Bacon Cheeseburger Casserole, substitute the ketchup with sugar-free ketchup or use 1 tablespoon of Worcestershire sauce mixed with a dash of stevia or erythritol. Omit the potato chip topping. You can add 2 large eggs whisked into the soup mixture for extra richness and binding.
  • You can cook the bacon ahead of time to save time on this quick dinner bake.
  • For a Crockpot Cheeseburger Bake, combine all ingredients except the topping cheese. Cook on low for 3 to 4 hours or high for 1.5 to 2 hours. Top with cheese during the last 15 minutes of cooking.
