Make this simple, sweet and salty appetizer using Medjool dates, almonds, and bacon. These tapas-style bites bake quickly for a crowd-pleasing finger food.

  • 12 Medjool dates
  • 12 whole raw almonds
  • 6 slices thin-cut bacon, halved crosswise

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. If the dates are not pitted, slice them open lengthwise and remove the pits.
  3. Place one almond inside the cavity of each date.
  4. Wrap half a slice of bacon around each stuffed date, securing it with a toothpick if necessary.
  5. Place the wrapped dates on the prepared baking sheet.
  6. Bake for 12 to 15 minutes, or until the bacon is crisp and the dates are soft and caramelized.
  7. Remove from the oven and let cool slightly before serving.

Notes

  • For extra flavor, brush the bacon lightly with maple syrup before baking.
  • You can substitute blue cheese crumbles or goat cheese for the almond if you prefer a creamy filling.
  • Use toothpicks to secure the bacon if it does not stay wrapped during baking.
