  • 1/2 cup granulated sugar

  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 cup peeled, cored, and finely diced apple (about 1 large apple)
  • 1 teaspoon vanilla extract
  • For the Glaze: 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a standard 12-cup muffin tin or line it with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate medium bowl, whisk together the granulated sugar, egg, milk, melted butter, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix gently with a spatula until just combined. Do not overmix; a few lumps are fine.
  5. Gently fold in the diced apples until they are evenly distributed throughout the batter.
  6. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 15 to 18 minutes, or until the tops are lightly golden brown and a toothpick inserted into the center comes out clean.
  8. While the fritters bake, prepare the glaze. In a small bowl, whisk together the powdered sugar, 2 tablespoons of milk, and 1/2 teaspoon of vanilla extract until smooth. Add more milk, a drop at a time, if the glaze is too thick.
  9. Remove the fritters from the oven and let them cool in the pan for 5 minutes before transferring them to a wire rack to cool slightly more.
  10. Drizzle the sweet cinnamon glaze over the warm fritters before serving.
