1 (8 ounce) wheel of brie cheese, cold
1 sheet frozen puff pastry, thawed
1/4 cup fig jam
1/4 cup chopped walnuts
1 egg, beaten (for egg wash)
Instructions
Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.
If the brie is very cold, let it sit at room temperature for 10 minutes. Cut the wheel of brie in half horizontally to create two thinner layers.
Place one brie half, rind side down, on a lightly floured surface. Spread the fig jam evenly over the top surface of this brie half.
Sprinkle the chopped walnuts over the fig jam layer.
Place the second brie half on top of the jam and nuts, forming the original wheel shape.
Unfold the thawed puff pastry sheet on a lightly floured surface. Cut the pastry large enough to completely wrap the brie wheel.
Place the assembled brie wheel in the center of the puff pastry. Bring the edges of the pastry up and over the brie, sealing the seams tightly at the top. Trim any excess pastry.
Place the wrapped brie, seam-side down, onto the prepared baking sheet.
Brush the entire surface of the pastry with the beaten egg wash. You can score the top lightly with a knife for decoration, but do not cut through to the cheese.
Bake for 20 to 25 minutes, or until the pastry is golden brown and puffed.
Let the baked brie rest for 5 minutes before serving warm with crackers or sliced baguette.
Notes
For a quick appetizer for parties, you can skip the puff pastry and simply top the brie wheel directly with jam and nuts before baking.
If you prefer a different sweet and savory topping, substitute the fig jam with cranberry sauce or honey.
