  • 2 cups cooked, shredded chicken (use leftover chicken for speed)
  • 1 cup chopped romaine lettuce, crisp and dry
  • 1 cup diced ripe tomatoes
  • 6 slices bacon, cooked until crisp and crumbled
  • 1/2 cup mayonnaise (or Greek yogurt for a lighter version)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/4 cup diced avocado

Instructions

  1. Cook the bacon until crisp. Drain the bacon on paper towels, then crumble it into small pieces. Set aside.
  2. In a large bowl, combine the shredded chicken, chopped lettuce, diced tomatoes, and crumbled bacon. If using, add the avocado now.
  3. In a separate small bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper until smooth. This creates your creamy dressing.
  4. Pour the dressing over the chicken and vegetable mixture.
  5. Gently fold all ingredients together until everything is evenly coated. Do not overmix.
