Make these easy no-bake Buckeye Graham Crackers for a quick, satisfying treat that combines creamy peanut butter, crunchy graham crackers, and rich chocolate coating. This simple recipe is perfect for busy home kitchens and family gatherings.

  • 1 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 24 graham crackers, whole sheets
  • 12 ounces semi-sweet chocolate chips
  • 1 tablespoon shortening or coconut oil

Instructions

  1. Combine the peanut butter, powdered sugar, softened butter, and vanilla extract in a medium bowl. Mix with a spoon or electric mixer until the mixture is smooth and well combined. This is your peanut butter filling.
  2. Take one whole graham cracker sheet and spread about 1 to 1.5 tablespoons of the peanut butter mixture evenly over the top surface.
  3. Place a second whole graham cracker sheet directly on top of the peanut butter mixture, creating a sandwich. Gently press down so the filling spreads slightly to the edges.
  4. Repeat this process until all graham crackers and peanut butter filling are used, creating 12 graham cracker sandwiches.
  5. Place the sandwiches on a baking sheet lined with parchment paper. Place the sheet in the freezer for at least 30 minutes to firm up the filling.
  6. While the sandwiches chill, prepare the chocolate coating. In a microwave-safe bowl, combine the chocolate chips and shortening (or coconut oil). Microwave in 30-second intervals, stirring well after each interval, until the chocolate is completely smooth.
  7. Remove the chilled graham cracker sandwiches from the freezer. Dip each sandwich into the melted chocolate, ensuring most of the surface is covered, leaving a small circle of the graham cracker visible at the top, mimicking the classic Buckeye look.
  8. Place the chocolate-dipped crackers back onto the parchment-lined baking sheet.
  9. Return the treats to the refrigerator or freezer for about 15 minutes, or until the chocolate coating is set.
  10. Serve immediately or store in an airtight container in the refrigerator.

Notes

  • For a faster set time, place the dipped crackers in the freezer for 10 minutes.
  • If you prefer bars over individual sandwiches, you can press the peanut butter mixture into an 8×8 inch pan lined with graham crackers, top with another layer of crackers, and then pour the melted chocolate over the top before cutting into squares once set.
