  • 1/2 cup hot sauce (like Frank’s RedHot)
  • 1/4 cup unsalted butter, melted, or vegan butter substitute
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon brown sugar
  • For serving: Celery sticks, carrot sticks, vegan ranch or blue cheese dressing

Instructions

  1. Prepare the cauliflower: Wash and thoroughly dry the cauliflower florets. Moisture prevents crispiness.
  2. Make the batter: In a medium bowl, whisk together the flour, salt, pepper, and garlic powder. Slowly whisk in the milk until you have a thick, pancake-like batter.
  3. Coat the cauliflower: Dip each cauliflower floret into the batter, ensuring it is fully coated. Let excess drip off.
  4. Preheat the air fryer to 380°F (195°C). Lightly spray the air fryer basket with cooking spray.
  5. Arrange the battered florets in a single layer in the air fryer basket. Do not overcrowd; work in batches if necessary.
  6. Air fry for 10 minutes. Flip the florets and continue air frying for another 5 to 8 minutes, until golden brown and crispy.
  7. While the cauliflower cooks, prepare the sauce: In a small saucepan over low heat, melt the butter. Whisk in the hot sauce, apple cider vinegar, and brown sugar until combined. Keep warm.
  8. Transfer the hot, crispy cauliflower bites to a large bowl. Pour the buffalo sauce over the florets and gently toss until every piece is coated.
  9. Serve immediately with your favorite dipping sauce and fresh vegetables for the ultimate crunchy vegetarian snack.

Notes

  • For the ultimate crunch, after air frying, you can briefly toss the sauced cauliflower back into the air fryer for 1 minute at 400°F (200°C) just before serving.
  • If you prefer a baked version, arrange the battered florets on a parchment-lined baking sheet and bake at 425°F (220°C) for 20-25 minutes, flipping halfway.
