Make crowd-pleasing appetizers that deliver bold buffalo wing flavor in a portable, mess-free tortilla roll-up. These pinwheels are perfect for game day or graduation party food.

  • 8 ounces cream cheese, softened
  • 1/2 cup cooked, shredded chicken breast
  • 1/3 cup buffalo wing sauce
  • 1/4 cup ranch dressing
  • 1/4 cup shredded cheddar cheese
  • 4 large flour tortillas (about 10 inches)

Instructions

  1. In a medium bowl, combine the softened cream cheese, shredded chicken, buffalo wing sauce, ranch dressing, and cheddar cheese. Mix until all ingredients are fully incorporated and smooth.
  2. Lay one large flour tortilla flat on a clean surface. Spread about one-quarter of the chicken mixture evenly over the entire surface of the tortilla, leaving a small border on one edge.
  3. Starting from the edge opposite the border, tightly roll the tortilla into a compact log.
  4. Wrap the rolled tortilla tightly in plastic wrap. Repeat this process with the remaining mixture and tortillas.
  5. Refrigerate the wrapped logs for at least 2 hours, or up to 24 hours, to allow them to firm up. This step is key for clean slicing.
  6. When ready to serve, unwrap the logs and use a sharp knife to slice each log into 1-inch thick pinwheels.
  7. Arrange the buffalo chicken pinwheels on a serving platter.

Notes

  • For make ahead snacks, prepare the logs up to a day in advance. Slicing is easiest when the logs are very cold.
  • If you prefer a puff pastry base instead of tortillas, bake the pastry sheets first, cool completely, spread the filling, roll, chill, and slice.
  • Serve these finger food appetizers with extra ranch or blue cheese dressing on the side for dipping.
