Creamy Three-Cheese Stuffed Baked Chicken Breast with Spinach

Make moist, flavorful baked chicken breast stuffed with a creamy blend of three cheeses, spinach, and sun-dried tomatoes. This simple recipe delivers comfort food flavor for your weeknight dinner.

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 4 ounces cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup fresh spinach, chopped
  • 1/4 cup sun-dried tomatoes in oil, drained and chopped
  • 1 teaspoon garlic powder

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a baking dish.
  2. Prepare the chicken: Place each chicken breast between two sheets of plastic wrap. Pound the thickest part gently with a meat mallet until the breast is an even thickness, about 1/2 inch.
  3. Make the stuffing: In a small bowl, combine the softened cream cheese, mozzarella cheese, Parmesan cheese, chopped spinach, sun-dried tomatoes, and garlic powder. Mix until well combined.
  4. Stuff the chicken: Cut a deep pocket into the side of each chicken breast, being careful not to cut all the way through. Spoon the cheese mixture evenly into the pockets of the four chicken breasts. Secure the opening with toothpicks if necessary.
  5. Season the chicken: Rub the outside of the stuffed chicken breasts with olive oil and season generously with salt and pepper. Place the chicken in the prepared baking dish.
  6. Bake: Bake for 25 to 30 minutes, or until the internal temperature reaches 165 degrees Fahrenheit and the cheese is melted and bubbly.
  7. Rest and serve: Remove the chicken from the oven and let it rest for 5 minutes before slicing and serving. Remove any toothpicks before serving.

Notes

  • For extra flavor, you can mix 1/4 cup of shredded provolone cheese into the stuffing mixture.
  • If you want a golden-brown top, sprinkle an extra tablespoon of Parmesan cheese over the top of the chicken breasts for the last 5 minutes of baking.
  • To keep the chicken juicy, use a meat thermometer; do not overcook past 165 degrees Fahrenheit.
