  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cooked white rice (about 1 cup uncooked)
  • 2 cups fresh or frozen broccoli florets, thawed if frozen
  • 2 cups shredded sharp cheddar cheese, divided
  • 1/2 cup crushed butter crackers or breadcrumbs (optional topping)
  • 2 tablespoons melted butter (for topping, if using)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the cream of chicken soup, cream of mushroom soup, milk, onion powder, garlic powder, salt, and pepper. Whisk until the sauce is smooth.
  3. Stir in the cooked chicken, cooked rice, broccoli florets, and 1 1/2 cups of the shredded cheddar cheese into the soup mixture until everything is evenly coated.
  4. Pour the mixture into the prepared baking dish and spread it into an even layer.
  5. In a small bowl, mix the remaining 1/2 cup of cheddar cheese with the crushed crackers or breadcrumbs, if you are using a topping. Sprinkle this mixture evenly over the casserole.
  6. If using the topping, drizzle the 2 tablespoons of melted butter over the cracker topping.
