Make this satisfying Chicken Caesar Pasta Salad for a quick dinner or your next potluck. It combines tender chicken, crisp romaine, and pasta tossed in a creamy homemade Caesar dressing for a crowd-pleasing meal.

  • 1 pound rotini or penne pasta
  • 2 large boneless, skinless chicken breasts, cooked and shredded or diced
  • 1 large head romaine lettuce, chopped
  • 1 cup croutons
  • 1/2 cup grated Parmesan cheese
  • For the Creamy Caesar Dressing:
  • 1/2 cup mayonnaise
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon Worcestershire sauce
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Cook the pasta according to package directions until al dente. Drain the pasta and rinse with cold water to cool it down. Set aside.
  2. Prepare the homemade Caesar dressing: In a small bowl, whisk together the mayonnaise, olive oil, lemon juice, Dijon mustard, minced garlic, and Worcestershire sauce until smooth. Stir in the 1/4 cup of Parmesan cheese. Season with salt and pepper.
  3. In a very large bowl, combine the cooled pasta, cooked chicken, and chopped romaine lettuce.
  4. Pour the creamy Caesar dressing over the pasta and chicken mixture. Toss gently until everything is evenly coated.
  5. Fold in the croutons and the remaining 1/2 cup of grated Parmesan cheese just before serving to keep the croutons crisp.
  6. Serve this satisfying cold chicken pasta salad immediately, or chill for later meal prep.
