Simple Cheesy Chicken Pasta Casserole Bake

Make this easy, comforting chicken pasta casserole using cooked chicken for a quick weeknight dinner. It is a family friendly baked pasta dish.

  • 1 pound dried egg noodles or rotini pasta
  • 2 cups cooked, shredded chicken (rotisserie chicken works well)
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 cup milk
  • 1 teaspoon dried onion powder
  • 1/2 teaspoon black pepper
  • 2 cups shredded cheddar cheese, divided
  • 1/2 cup bread crumbs (optional topping)
  • 2 tablespoons melted butter (for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Cook the pasta according to package directions until al dente. Drain the pasta well and set it aside.
  3. In a large bowl, combine the cream of chicken soup, cream of mushroom soup, milk, onion powder, and black pepper. Mix until smooth.
  4. Stir in the shredded chicken and 1 1/2 cups of the shredded cheddar cheese into the soup mixture. Mix gently to coat everything evenly.
  5. Fold the cooked pasta into the chicken and sauce mixture. Pour the entire mixture into the prepared baking dish.
  6. Sprinkle the remaining 1/2 cup of cheddar cheese over the top of the casserole.
  7. If using, mix the bread crumbs with the melted butter and sprinkle this mixture over the cheese layer.
  8. Bake for 25 to 30 minutes, or until the casserole is bubbly throughout and the topping is golden brown.
  9. Let the casserole rest for 5 minutes before serving.

Notes

  • For a richer flavor, substitute one can of soup with cream of celery soup.
  • Add 1 cup of frozen peas or chopped celery to the mixture before baking for extra vegetables.
  • If you want a spicier dish, add 1/4 teaspoon of cayenne pepper to the sauce mixture.
  • This recipe is great for using leftover chicken from a previous meal.
