Make this restaurant-style Chicken Scampi served over rich, creamy Garlic Parmesan Rice. This easy skillet chicken recipe is perfect for a flavorful weeknight dinner.

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine (like Pinot Grigio) or chicken broth
  • 1/4 cup fresh lemon juice
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 2 cups cooked white rice (prepared separately)
  • 1/4 cup chopped fresh parsley
  • Salt and black pepper to taste

Instructions

  1. Season the chicken pieces lightly with salt and pepper.
  2. Heat the olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set it aside.
  3. Reduce the heat to medium. Add the remaining 2 tablespoons of butter to the skillet. Add the minced garlic and red pepper flakes (if using) and cook for about 1 minute until fragrant. Do not let the garlic burn.
  4. Pour in the white wine or broth and lemon juice. Let it simmer and reduce slightly for 2 minutes, scraping up any browned bits from the bottom of the pan.
  5. Stir in the heavy cream and bring the sauce to a gentle simmer. Cook for 2 minutes until it begins to thicken slightly.
  6. Stir in the 1/2 cup of grated Parmesan cheese until the sauce is smooth and creamy. Taste and adjust salt and pepper as needed.
  7. Return the cooked chicken to the skillet and toss to coat it completely in the scampi sauce.
  8. Prepare your Garlic Parmesan Rice: In a separate pot, combine the cooked white rice with 1 tablespoon of butter, 1/4 cup of Parmesan cheese, and a pinch of salt. Stir well until the rice is creamy and heated through.
  9. To serve, spoon a portion of the Garlic Parmesan Rice onto each plate. Top with the Chicken Scampi and spoon extra sauce over the top. Garnish with fresh parsley and extra Parmesan cheese.

Notes

  • For the creamiest rice, use freshly grated Parmesan cheese instead of pre-shredded.
  • If you prefer a richer scampi sauce, substitute chicken broth for the white wine.
  • You can add 1 cup of fresh spinach to the sauce at the end for extra vegetables.
