  • 1/2 cup mayonnaise
  • 2 tablespoons sweet pickle relish
  • 1 tablespoon Dijon mustard
  • 1 teaspoon white vinegar or pickle juice
  • 1/4 cup finely chopped celery (optional)
  • 2 hard-boiled eggs, chopped (optional)
  • Salt and black pepper to taste

Instructions

  1. Place the finely chopped ham in a medium bowl. If using hard-boiled eggs, add them now.
  2. In a separate small bowl, whisk together the mayonnaise, sweet pickle relish, Dijon mustard, and vinegar or pickle juice until smooth.
  3. Pour the dressing mixture over the ham and eggs.
  4. Add the chopped celery, if you are using it.
  5. Use a fork or spoon to mix all ingredients until they are just combined. Do not overmix.
  6. Taste the ham salad and season with salt and pepper as needed.
  7. Cover the bowl and chill the ham salad in the refrigerator for at least 30 minutes before serving. This allows the flavors to blend.
