Ingredients
Scale
2 lbs ground beef (80/20 recommended)
1 cup dry breadcrumbs (like plain or Italian style)
1/2 cup milk
1/2 cup finely chopped onion
1 large egg, lightly beaten
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 cup ketchup (for the mix)
1/2 cup ketchup (for the glaze)
1/4 cup packed brown sugar (for the glaze)
1 tablespoon apple cider vinegar (for the glaze)
Instructions
Preheat your oven to 350 degrees Fahrenheit. Lightly grease a 9×5 inch loaf pan.
In a large bowl, combine the breadcrumbs and milk. Let this mixture sit for 5 minutes to allow the breadcrumbs to soften.
Add the ground beef, chopped onion, beaten egg, salt, pepper, garlic powder, and the 1/4 cup of ketchup for the mix into the bowl with the soaked breadcrumbs.
Use your hands to gently mix all the ingredients until they are just combined. Do not overmix, as this can make the meatloaf tough.
Press the meat mixture evenly into the prepared loaf pan.
In a small bowl, whisk together the 1/2 cup ketchup, brown sugar, and apple cider vinegar to create the glaze.
Spread the glaze evenly over the top of the meatloaf.
Bake for 60 to 75 minutes, or until the internal temperature reaches 160 degrees Fahrenheit.
Remove the meatloaf from the oven and let it rest in the pan for 10 minutes before slicing. This helps keep your meatloaf juicy.
Slice and serve this comforting main dish hot.
Notes
For an extra moist meatloaf, you can form the mixture into a loaf shape on a baking sheet instead of using a pan, which allows fat to drain away.
If you prefer a slightly different flavor for the best meatloaf glaze, substitute Worcestershire sauce for the apple cider vinegar.
This recipe is a simple ground beef recipe that works well for weeknight meatloaf preparation.
