  • 4 oz chilled Prosecco or dry sparkling wine
  • 2 oz fresh peach puree (from ripe peaches)
  • 1/4 oz peach schnapps (optional, for intensity)

Instructions

  1. Chill your champagne flutes thoroughly before starting.
  2. Prepare the peach puree by blending ripe peaches until smooth. Strain the puree through a fine-mesh sieve to remove any solids for a silky texture.
  3. If using, pour the peach schnapps into the bottom of each chilled flute.
  4. Gently pour the peach puree over the schnapps.
  5. Slowly top with the chilled Prosecco. Pour down the side of the glass to maintain carbonation.
  6. Serve immediately. Do not stir; allow the layers to naturally blend for the classic gradient effect.

Notes

  • For an easy 3-ingredient version, skip the peach schnapps and use only peach puree and Prosecco.
  • Use very cold Prosecco; chilling the ingredients is key to a good Bellini.
  • For a Strawberry Bellini variation, substitute the peach puree with fresh strawberry puree.
  • If making a large batch for a party, mix the puree and schnapps ahead of time and keep it refrigerated. Add the Prosecco just before serving.
