1 pound pasta (fettuccine or penne recommended)
2 tablespoons olive oil
2 tablespoons butter
1 pound cremini mushrooms, sliced
4 cloves garlic, minced
1/2 teaspoon dried thyme
1 cup vegetable broth
1 cup heavy cream
1 cup grated Parmesan cheese, plus more for serving
1/4 cup fresh parsley, chopped

Instructions
Cook the pasta according to package directions until al dente. Reserve 1 cup of the starchy pasta water before draining.
While the pasta cooks, heat the olive oil and butter in a large skillet over medium-high heat.
Add the sliced mushrooms to the skillet and cook, stirring occasionally, until they release their liquid and begin to brown, about 6 to 8 minutes.
Add the minced garlic and dried thyme to the skillet. Cook for 1 minute until fragrant.
Pour in the vegetable broth and let it simmer for 2 minutes, scraping up any browned bits from the bottom of the pan.
Reduce the heat to medium-low. Stir in the heavy cream and bring the sauce to a gentle simmer. Do not boil.
Stir in the grated Parmesan cheese until the sauce is smooth. Season with salt and pepper.
Add the drained pasta to the skillet with the sauce. Toss to coat. If the sauce seems too thick, add the reserved pasta water, a splash at a time, until you reach your desired consistency.
Stir in the fresh parsley. Serve immediately with extra Parmesan cheese on top.

For a deeper umami flavor, add 1 teaspoon of white miso paste when you add the heavy cream.
