4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 tablespoon butter
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1/2 teaspoon dried Italian seasoning
4 cloves garlic, minced
1/2 cup sun-dried tomatoes, drained and chopped
1 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 cups fresh spinach
1/4 teaspoon red pepper flakes (optional)
Instructions
Season the chicken breasts on both sides with salt, pepper, garlic powder, and Italian seasoning.
Heat the olive oil and butter in a large skillet over medium-high heat.
Add the chicken breasts to the hot skillet and sear for 5 to 7 minutes per side until golden brown and cooked through (internal temperature reaches 165 degrees F). Remove the chicken from the skillet and set aside on a plate.
Reduce the heat to medium. Add the minced garlic and chopped sun-dried tomatoes to the skillet. Cook for 1 minute until the garlic is fragrant.
Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let it simmer for 2 minutes.
Stir in the heavy cream and red pepper flakes, if using. Bring the sauce to a gentle simmer.
Whisk in the grated Parmesan cheese until the sauce is smooth and slightly thickened. Taste the sauce and add more salt or pepper if needed.
Add the fresh spinach to the sauce. Stir until the spinach wilts down, about 1 to 2 minutes.
Return the cooked chicken breasts to the skillet, nestling them into the creamy sauce. Spoon some sauce over the chicken.

Notes
For a richer sauce, use half-and-half instead of heavy cream, but simmer slightly longer to reduce and thicken.
If you want a low carb chicken dinner, skip serving it over pasta and serve it with steamed broccoli or cauliflower rice.
To achieve juicy chicken breasts, avoid overcooking them in the initial sear; they will finish cooking when returned to the sauce.
