1 pound rotini or medium shell pasta
8 slices bacon, cooked crisp and crumbled
1 cup mayonnaise
1/2 cup sour cream
1/4 cup dill pickle brine
2 tablespoons yellow mustard
1 tablespoon granulated sugar
1 teaspoon celery seed
1/2 teaspoon black pepper
1 1/2 cups dill pickle chips, drained and chopped
1/2 cup finely chopped celery
1/4 cup finely chopped red onion
1/4 cup fresh dill, chopped (optional)
Instructions
Cook the pasta according to package directions until al dente. Drain the pasta and rinse immediately with cold water to stop cooking. Set aside.
While the pasta cooks, cook the bacon until crisp. Drain the bacon on paper towels, then crumble it.
In a large bowl, whisk together the mayonnaise, sour cream, dill pickle brine, yellow mustard, sugar, celery seed, and black pepper until smooth. This makes your tangy cold pasta salad dressing.
Add the cooled pasta, chopped pickles, celery, red onion, and most of the crumbled bacon to the dressing. Reserve some bacon for topping.
Gently fold all ingredients together until the pasta is evenly coated.
Stir in the fresh dill, if using.
Cover the bowl and chill the pasta salad for at least 2 hours before serving. Chilling allows the flavors to blend.
Before serving, taste and adjust seasoning if needed. Top with the remaining crumbled bacon.
Notes
For the best texture, make sure you rinse the cooked pasta well with cold water after draining.
You can substitute Greek yogurt for some of the sour cream to make a slightly lighter dressing.
This recipe works well as a make ahead pasta side; it tastes even better the next day.
If you prefer a less creamy texture, reduce the mayonnaise and sour cream by 1/4 cup total and add 2 tablespoons of white wine vinegar.
