  • 8 ounces high-quality bittersweet or semi-sweet chocolate, finely chopped
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon light corn syrup (for extra shine and stability)

Instructions

  1. Place the finely chopped chocolate into a medium, heat-safe bowl.
  2. In a small saucepan, heat the heavy cream and corn syrup over medium heat until it just begins to simmer around the edges. Do not let it boil rapidly.
  3. Pour the hot cream mixture directly over the chopped chocolate. Let it sit undisturbed for 5 minutes to allow the chocolate to melt completely.
  4. Add the vanilla extract. Gently whisk the mixture starting from the center and moving outward until the chocolate is completely melted and the fondue is smooth and velvety.
  5. Transfer the chocolate fondue to a fondue pot or a small slow cooker set to low to keep it warm. Serve immediately with your favorite dippers.
