Make this simple chicken cobbler casserole using rotisserie chicken and a biscuit topping for a quick, comforting family dinner perfect for busy weeknights.

  • 3 cups cooked, shredded chicken (use rotisserie chicken for a shortcut)
  • 1 (10.5 ounce) can cream of chicken soup
  • 1 (10.5 ounce) can cream of celery soup
  • 1 cup chicken broth
  • 1 cup sour cream
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 teaspoon dried onion powder
  • 1/2 teaspoon black pepper
  • 1 (10 ounce) package Cheddar Bay Biscuit Mix (or similar cheesy biscuit mix)
  • Ingredients required by biscuit mix package (usually milk and butter)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the shredded chicken, cream of chicken soup, cream of celery soup, chicken broth, sour cream, frozen mixed vegetables, onion powder, and black pepper. Mix until all ingredients are evenly coated.
  3. Pour the chicken mixture into the prepared baking dish and spread it into an even layer.
  4. Prepare the biscuit mix according to the package directions, adding the required milk and butter to create a thick batter or dough.
  5. Drop spoonfuls of the biscuit batter evenly over the top of the chicken mixture, leaving small spaces between the dollops.
  6. Bake for 25 to 30 minutes, or until the filling is bubbly and the biscuit topping is golden brown and cooked through.
  7. Let the chicken cobbler rest for 5 minutes before you serve it.

  • Using pre-cooked rotisserie chicken cuts your prep time significantly, making this a true weeknight chicken dinner solution.
  • If you do not have Cheddar Bay Biscuit mix, you can substitute with a standard refrigerated biscuit dough, brushing the tops with melted butter before baking.
