Make this creamy, comforting Finnish Salmon Soup, Lohikeitto, for a simple, hearty meal. This one-pot recipe uses fresh dill, potatoes, and tender salmon for a classic Nordic flavor.

  • 1.5 lb salmon fillets, skin removed and cut into 1-inch cubes
  • 1 tablespoon butter
  • 2 large leeks, white and light green parts only, sliced
  • 4 medium potatoes, peeled and cubed (about 1 inch)
  • 6 cups fish or vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream or half-and-half
  • 1/4 cup fresh dill, chopped

Instructions

  1. Melt the butter in a large pot or Dutch oven over medium heat. Add the sliced leeks and cook until soft, about 5 minutes. Do not brown them.
  2. Add the cubed potatoes, broth, salt, and pepper to the pot. Bring the mixture to a boil, then reduce heat and simmer until the potatoes are tender, about 10 to 15 minutes.
  3. Gently stir in the cubed salmon pieces. Cook for 3 to 5 minutes, until the salmon is opaque and flakes easily. Avoid overcooking the fish.
  4. Reduce the heat to low. Stir in the heavy cream. Heat through gently, but do not allow the soup to boil after adding the cream.
  5. Remove the pot from the heat. Stir in the fresh chopped dill. Taste and adjust salt and pepper if needed.
  6. Serve this comforting winter soup immediately.

Notes

  • For a richer flavor, you can substitute half the broth with dry white wine, simmering it for 2 minutes before adding the remaining broth.
  • If you prefer a thicker consistency, mash a few of the cooked potatoes against the side of the pot before adding the cream.
  • This recipe works well for a quick seafood soup, taking under 30 minutes total cook time.
