  • 1 large onion, sliced
  • 2 bell peppers (any color), sliced

  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Juice of 1 lime
  • 8 small flour tortillas
  • Optional toppings: sour cream, salsa, avocado

Instructions

  1. In a medium bowl, toss the shrimp with lime juice, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Let it sit while you prepare the vegetables.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Add the sliced onion and bell peppers to the skillet. Cook for 5 to 7 minutes, stirring occasionally, until the vegetables are tender-crisp. Remove the vegetables from the skillet and set them aside.
  4. Add the seasoned shrimp to the same hot skillet in a single layer. Cook for 2 to 3 minutes per side until the shrimp is pink and cooked through. Do not overcrowd the pan; cook in batches if necessary.
  5. Return the cooked vegetables to the skillet with the shrimp. Toss everything together for 1 minute to heat through.
  6. Warm your tortillas according to package directions.
  7. Serve the sizzling shrimp and vegetable mixture immediately in warm tortillas with your favorite toppings.
