Make this rich, savory French onion butter rice casserole. It uses simple ingredients like French onion soup mix and beef broth to create a comforting side dish that pairs well with chicken or steak.

Ingredients

Scale
  • 1 cup long-grain white rice, uncooked
  • 1 (10.5 ounce) can condensed French onion soup
  • 1 (10.5 ounce) can condensed cream of mushroom soup (or cream of chicken soup)
  • 1 cup beef broth
  • 1 cup water
  • 1/2 cup (1 stick) unsalted butter, cut into small pieces
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 cup shredded Gruyère cheese (optional, for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the uncooked rice, French onion soup, cream of mushroom soup, beef broth, and water. Stir these ingredients together until they are well mixed.
  3. Stir in the onion powder, garlic powder, and black pepper.
  4. Pour the rice mixture evenly into the prepared baking dish.
  5. Distribute the pieces of butter over the top of the rice mixture. Do not stir the butter in.
  6. Cover the baking dish tightly with aluminum foil.
  7. Bake for 50 to 60 minutes, or until the liquid is absorbed and the rice is tender.
  8. Carefully remove the foil. If using cheese, sprinkle the shredded Gruyère cheese evenly over the top.
  9. Return the dish to the oven, uncovered, for 5 to 10 minutes, or until the cheese is melted and lightly golden brown.
  10. Let the French onion butter rice rest for 5 minutes before serving.

Notes

  • For a deeper onion flavor, sauté one small, thinly sliced yellow onion in 1 tablespoon of butter until caramelized before mixing it into the rice base.
  • This savory rice recipe works well as a stuffing alternative for holiday meals.
  • If you do not have beef broth, you can substitute it with chicken broth, though the flavor will be slightly different.
