Make this easy garlic butter rice recipe for a quick side dish that tastes rich and savory. It uses chicken broth for extra flavor and is ready in under 30 minutes.

  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 small shallot, finely chopped (optional)
  • 1 1/2 cups long grain white rice
  • 2 1/4 cups chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat the olive oil and 2 tablespoons of the butter in a medium saucepan over medium heat.
  2. Add the minced garlic and chopped shallot (if using). Cook for about 1 minute until fragrant. Do not let the garlic burn.
  3. Add the long grain white rice to the saucepan. Stir constantly for 1 to 2 minutes to toast the grains lightly.
  4. Pour in the chicken broth, salt, and pepper. Bring the mixture to a boil.
  5. Once boiling, reduce the heat to the lowest setting, cover the saucepan tightly, and simmer for 15 minutes without lifting the lid.
  6. Remove the saucepan from the heat and let it stand, covered, for 5 minutes. This step helps the rice become fluffy.
  7. Fluff the rice gently with a fork. Stir in the remaining 2 tablespoons of cold butter until melted and incorporated.
  8. Stir in the fresh parsley before serving.

  • For the best texture, use long grain white rice like Basmati or Jasmine.
  • Do not skip the 5-minute resting period off the heat; this is key to fluffy rice.
