  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cloves garlic, minced
  • 1/2 cup honey
  • 1/4 cup soy sauce (low sodium preferred)
  • 2 tablespoons rice vinegar
  • 1 teaspoon ground ginger
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • Optional: Sesame seeds and sliced green onions for garnish

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides and cooked through, about 6–8 minutes. Remove the chicken from the skillet and set aside.
  3. Reduce the heat to medium. Add the minced garlic to the same skillet and cook for about 30 seconds until fragrant. Do not let the garlic burn.
  4. In a small bowl, whisk together the honey, soy sauce, rice vinegar, and ground ginger. Pour this sauce mixture into the skillet. Bring the sauce to a simmer.
  5. In a separate small bowl, whisk together the cornstarch and cold water to create a slurry. Pour the slurry into the simmering sauce while stirring constantly. Continue to cook until the sauce thickens into a glaze, about 1–2 minutes.
  6. Return the cooked chicken to the skillet. Toss the chicken pieces until they are fully coated in the sticky honey garlic sauce.
  7. Remove from heat. Serve the honey garlic chicken immediately over rice or vegetables, garnished with sesame seeds and green onions if desired.

Notes

  • For chicken thighs, you may need an extra minute or two of cooking time to ensure they are tender.
  • If you prefer a spicier flavor, add 1 teaspoon of Sriracha to the sauce mixture.
