  • 2 lbs boneless, skinless chicken thighs or breasts, cooked and shredded
  • 1 tablespoon olive oil
  • 1 pound cremini mushrooms, sliced
  • 4 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces cream cheese, softened
  • 1/2 cup heavy whipping cream
  • 1/2 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. In a large skillet over medium heat, add olive oil. Add the sliced mushrooms and cook until they release their liquid and start to brown, about 5 to 7 minutes.
  3. Add the minced garlic and Italian seasoning to the skillet. Cook for 1 minute until fragrant. Remove the mushroom mixture from the skillet and set aside.
  4. In the same skillet, reduce the heat to low. Add the softened cream cheese, heavy whipping cream, and chicken broth. Whisk constantly until the cream cheese melts and the sauce is smooth.
  5. Stir in the cooked, shredded chicken, the cooked mushroom mixture, salt, and pepper. Mix well to coat the chicken evenly in the creamy sauce.
  6. Spread the chicken mixture into the prepared baking dish.
  7. Top the casserole evenly with the mozzarella cheese and then the Parmesan cheese.
  8. Bake for 15 to 20 minutes, or until the cheese is melted, bubbly, and lightly golden brown.
  9. Remove from the oven and let it rest for 5 minutes before garnishing with fresh parsley. Serve hot.
