1 cup almond flour
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon onion powder

2 large eggs, lightly beaten
1/4 cup unsweetened almond milk

Instructions
Prepare the onions: Slice the onions into 1/4-inch rings. Separate the rings and set them aside. Pat the onion rings dry with paper towels to remove excess moisture.
Set up the dredging stations: In one shallow bowl, whisk together the eggs and almond milk. In a second shallow bowl, combine the almond flour, Parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix these dry ingredients well.
Coat the onion rings: Dip each onion ring first into the egg mixture, letting any excess drip off. Then, press the ring firmly into the almond flour mixture, ensuring it is completely coated. Place the coated rings on a plate.

Notes
Yellow onions work well, but sweet Vidalia onions can also be used if you monitor your carb intake closely.
