Make this refreshing, visually appealing lavender lemonade mocktail using a simple homemade lavender simple syrup. It is a perfect zero proof cocktail for summer gatherings.

Ingredients

  • 1 cup granulated sugar
  • 1 cup water
  • 1/4 cup dried culinary lavender buds
  • 1 cup fresh lemon juice
  • 3 cups cold sparkling water
  • Ice cubes
  • Lemon slices and fresh mint sprigs for garnish

Instructions

  1. Make the lavender simple syrup: Combine sugar, water, and dried lavender buds in a small saucepan. Heat over medium heat, stirring until the sugar dissolves completely. Do not boil.
  2. Remove the syrup from the heat, cover, and let the lavender steep for 30 minutes.
  3. Strain the syrup through a fine-mesh sieve into a clean jar, discarding the lavender buds. You now have homemade lavender syrup. Let it cool completely.
  4. In a large pitcher, combine the fresh lemon juice and 1/2 cup of the cooled lavender simple syrup. Taste and add more syrup if you prefer a sweeter drink.
  5. When ready to serve, fill glasses with ice cubes. Pour the lemonade mixture into the glasses, filling them about halfway.
  6. Top each glass with cold sparkling water. Stir gently.
  7. Garnish each lavender mocktail with a lemon slice and a fresh mint sprig.

Notes

  • For a deeper floral flavor, steep the lavender for 45 minutes, but do not exceed this time to avoid bitterness.
  • If you want a blueberry lavender mocktail variation, muddle 1/4 cup of fresh blueberries in the bottom of the pitcher before adding liquids.
  • This recipe makes a great base for a party non alcoholic drinks setup; prepare the syrup and lemonade base ahead of time.
