Quick Soy-Citrus Marinade for Tuna Steaks

A fast, flavorful marinade using soy sauce and citrus to tenderize tuna steaks before searing or grilling.

Ingredients

  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 1 tablespoon brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon black pepper

Instructions

  1. In a small bowl, whisk together the soy sauce, lime juice, olive oil, brown sugar, minced garlic, grated ginger, and black pepper until the sugar dissolves.
  2. Place your tuna steaks in a resealable plastic bag or a shallow dish.
  3. Pour the marinade over the tuna steaks, ensuring both sides are coated.
  4. Seal the bag or cover the dish. Marinate in the refrigerator for 15 to 30 minutes. Do not marinate longer than 30 minutes, as the acid can begin to cook the fish.
  5. Remove the tuna from the marinade and pat dry with paper towels before cooking. Discard the remaining marinade.

Notes

  • For grilling, preheat your grill to medium-high heat. Sear for 2 to 3 minutes per side for rare (125°F internal temperature).
  • For a cast-iron sear, heat one tablespoon of high-heat oil (like avocado oil) in the skillet until shimmering, then sear the steaks for the same time.
  • This recipe works well for ahi tuna marinade.
