  • 1 large shallot, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, packed in oil, drained and chopped
  • 1 cup brown or green lentils, rinsed
  • 4 cups vegetable broth
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream (or full-fat coconut milk for vegan)
  • 1/2 cup grated Parmesan cheese (or nutritional yeast for vegan)
  • 2 cups fresh spinach
  • 1 tablespoon fresh parsley, chopped, for garnish

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped shallot and cook until softened, about 3 minutes.
  2. Add the minced garlic and chopped sun-dried tomatoes. Cook for 1 minute until fragrant.
  3. Stir in the rinsed lentils, vegetable broth, Italian seasoning, salt, and pepper. Bring the mixture to a boil.
  4. Reduce the heat to low, cover the pot partially, and simmer for 30 to 40 minutes, or until the lentils are tender and most of the liquid is absorbed. Stir occasionally to prevent sticking.
  5. Remove the pot from the heat. Stir in the heavy cream and Parmesan cheese (or nutritional yeast) until the sauce is smooth and creamy. This creates the rich lentil dish texture.
  6. Stir in the fresh spinach until it wilts into the sauce, about 1 minute.
  7. Taste and adjust salt and pepper if needed. Serve immediately, garnished with fresh parsley. This is a hearty lentil supper.
