  • 1 large head green cabbage, cut into 1-inch thick wedges
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese, plus more for topping
  • 1 teaspoon dried Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Place the cabbage wedges cut-side down in the prepared baking dish. Drizzle with olive oil, then sprinkle evenly with salt and pepper.
  3. Roast the cabbage for 20 minutes until the edges begin to soften slightly.
  4. While the cabbage roasts, prepare the sauce. In a small bowl, whisk together the heavy cream, chicken broth, minced garlic, 1/2 cup of Parmesan cheese, Italian seasoning, and red pepper flakes, if using.
  5. Remove the baking dish from the oven. Pour the cream mixture evenly over and around the cabbage wedges.
  6. Return the dish to the oven and bake for another 20 to 25 minutes, or until the cabbage is fork-tender and the sauce is bubbly and slightly thickened.
  7. Remove from the oven. Sprinkle the top with extra Parmesan cheese. Let it rest for 5 minutes before serving. Garnish with fresh parsley.

Notes

  • For a low carb creamy cabbage option, use only heavy cream and omit the broth.
  • If you prefer a crispier top, place the dish under the broiler for the last 2 minutes, watching closely to prevent burning.
  • This recipe works well as a one pan cabbage dinner when served with a simple protein.
