Make smooth, sweet homemade marzipan in minutes using almond flour. This no-cook recipe is perfect for cake decorating or making quick almond treats.

  • 2 cups almond flour
  • 1 cup powdered sugar, sifted
  • 1 teaspoon almond extract
  • 1 tablespoon water (or more, as needed)
  • 1/4 teaspoon rose water (optional)

Instructions

  1. Combine the almond flour and powdered sugar in a medium bowl. Whisk them together to remove any lumps.
  2. Add the almond extract and rose water, if using, to the dry ingredients.
  3. Pour in 1 tablespoon of water. Mix the ingredients with a spoon until a crumbly mixture forms.
  4. Use your hands to bring the mixture together into a cohesive dough ball. If the dough is too dry, add water, one teaspoon at a time, until it holds together without crumbling. Be careful not to add too much water, or the marzipan will become sticky.
  5. Knead the marzipan briefly on a clean surface until it is smooth and pliable.
  6. Wrap the marzipan tightly in plastic wrap. You can use it immediately or chill it for later use in cake decorating or candy making.

Notes

  • For a German marzipan recipe style, you can slightly reduce the amount of powdered sugar for a less sweet result.
  • If you plan to shape edible marzipan figures, let the dough rest for 30 minutes before working with it.
