Make this popular layered tortilla dish at home. This recipe delivers the crispy texture and savory flavor of the fast-food favorite quickly, making it a perfect weeknight dinner or game day food.

  • 1 pound ground beef
  • 1 packet taco seasoning mix
  • 2/3 cup water
  • 1 (15 ounce) can refried beans, warmed
  • 8 small flour tortillas (about 6 inches)
  • 1 cup enchilada sauce
  • 2 cups shredded Mexican cheese blend
  • 1/2 cup diced tomatoes (for topping)
  • 1/4 cup sliced black olives (for topping)
  • 2 tablespoons sliced green onions (for topping)

Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain off any excess fat.
  2. Stir in the taco seasoning mix and water. Bring to a simmer and cook for 5 minutes, stirring occasionally, until the liquid reduces. Set the seasoned beef aside.
  3. Preheat your oven to 400 degrees Fahrenheit. Lightly spray a baking sheet with cooking spray.
  4. Place four flour tortillas on the prepared baking sheet. Brush the tops lightly with vegetable oil or cooking spray. Bake for 5 to 7 minutes, or until they are lightly crisp. Remove from the oven.
  5. Flip the baked tortillas over. Spread an even layer of warmed refried beans over the crispy side of each tortilla.
  6. Top the beans with half of the seasoned ground beef mixture.
  7. Place the remaining four tortillas on top of the beef layer. Brush the tops lightly with oil or cooking spray. Bake for another 5 to 7 minutes until these top tortillas are also crisp.
  8. Remove the layered tortillas from the oven. Spread the enchilada sauce evenly over the top tortilla layer.
  9. Sprinkle the shredded cheese over the enchilada sauce. Return the pizza to the oven and bake for 5 minutes, or until the cheese is fully melted and bubbly.
  10. Remove the Mexican Pizza from the oven. Cut into wedges. Top each wedge with diced tomatoes, black olives, and green onions before serving.

Notes

  • To achieve the best crispy texture, lightly brush the tortillas with oil before baking them separately.
  • Warm the refried beans slightly before spreading them to make them easier to work with.
  • You can substitute ground turkey or chicken for the ground beef if desired.
