  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar (for topping)

Instructions

  1. Combine graham cracker crumbs and 1/4 cup granulated sugar in a bowl. Pour in melted butter and mix until the crumbs are evenly moistened. Press the mixture firmly into the bottom of a 9-inch springform pan. Place the crust in the freezer while you prepare the filling.
  2. In a large bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually beat in the sweetened condensed milk until fully combined.
  3. Mix in the fresh lemon juice, lemon zest, and vanilla extract until the mixture is uniform and creamy.
  4. In a separate, clean bowl, whip the heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until just combined, being careful not to deflate the cream.
  5. Pour the filling over the chilled crust and smooth the top with a spatula.
  6. Cover the pan loosely with plastic wrap and refrigerate for at least 6 hours, or preferably overnight, until firm.
  7. Before serving, carefully remove the sides of the springform pan. Whip the remaining heavy cream with powdered sugar until soft peaks form and spread or pipe over the top of the cheesecake. Garnish with extra lemon zest if desired.
