Make this easy, one-pot cheesy taco pasta for a quick weeknight dinner that tastes like homemade Hamburger Helper. This recipe uses simple ingredients and results in minimal cleanup.

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 packet (1 ounce) taco seasoning mix
  • 4 cups water or low-sodium broth
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 8 ounces elbow macaroni or small pasta shells
  • 1 cup milk
  • 2 cups shredded cheddar or Mexican blend cheese
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef and chopped onion in a large pot or Dutch oven over medium heat. Drain off any excess grease.
  2. Stir in the taco seasoning mix, water or broth, and the can of diced tomatoes and green chilies. Bring the mixture to a boil.
  3. Add the dry pasta to the boiling liquid. Stir well to prevent sticking.
  4. Reduce the heat to medium-low, cover the pot, and simmer for 10 to 12 minutes, or until the pasta is tender and most of the liquid is absorbed. Stir occasionally.
  5. Remove the pot from the heat. Stir in the milk and the shredded cheese until the cheese is fully melted and the sauce is creamy.
  6. Season with salt and pepper as needed. Serve immediately for a quick comfort food meal.

Notes

  • For a richer flavor, substitute half the water with beef broth.
  • If you prefer a spicier dish, add a dash of your favorite hot sauce with the milk.
  • Top servings with sour cream, chopped cilantro, or crushed tortilla chips.
