1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 large egg
3 tablespoons butter, melted
Instructions
In a large bowl, whisk together the flour, baking powder, salt, and sugar. This is your dry mix.
In a separate medium bowl, whisk together the milk and egg.
Pour the wet ingredients into the dry ingredients. Mix until just combined. Do not overmix; a few lumps are fine.
Stir in the melted butter gently.
Heat a lightly oiled griddle or large non-stick skillet over medium heat. The pan is ready when a drop of water sizzles immediately.
Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
Cook for 2 to 3 minutes per side. You know it is time to flip when bubbles appear on the surface and the edges look set.
Flip and cook until the second side is golden brown.
Serve immediately with your favorite toppings.
Notes
For extra fluffy homemade breakfast, let the batter rest for 5 to 10 minutes before cooking. This allows the gluten to relax and the leavening agents to activate.
If you prefer thinner pancakes, add one or two extra tablespoons of milk to the batter.
To keep pancakes warm while you cook the rest of the batch, place them on a baking sheet in a 200°F oven.
