1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup milk
1 large egg, lightly beaten
1 cup shredded low-moisture mozzarella cheese
1/2 cup grated Parmesan cheese, divided
1/2 cup panko breadcrumbs
1/4 cup all-purpose flour (for dredging)
1 large egg, beaten (for egg wash)
Cooking spray or oil for baking
1 cup marinara sauce, warmed (for dipping)
Instructions
Preheat your oven to 400°F (200°C). Lightly grease a baking sheet or line it with parchment paper. Spray the paper with cooking spray.
In a medium bowl, whisk together the 1 cup flour, baking powder, salt, and pepper.
In a separate small bowl, whisk the milk and 1 egg until combined.
Add the wet ingredients to the dry ingredients and mix until just combined to form a thick batter. Do not overmix.
Gently fold in the mozzarella cheese and half (1/4 cup) of the Parmesan cheese into the batter.
Set up your dredging station: Place the remaining 1/4 cup flour in one shallow dish, the remaining beaten egg in a second dish, and the panko breadcrumbs mixed with the remaining 1/4 cup Parmesan cheese in a third dish.
Using a small cookie scoop or two spoons, drop rounded tablespoons of the cheese mixture into the flour dish, coating lightly.
Dip the floured portion into the egg wash, letting excess drip off.
Roll the mixture thoroughly in the panko-Parmesan mixture until fully coated.
Place the coated cheese bites onto the prepared baking sheet, leaving a little space between them. Spray the tops generously with cooking spray or brush lightly with oil.
Bake for 12 to 15 minutes, or until golden brown and the cheese inside is melted and gooey.
Serve the hot, crispy parmesan mozzarella cheese bites immediately with the warm marinara sauce for dipping.
Notes
For an air fryer cheese bites recipe, cook at 375°F (190°C) for 8 to 10 minutes, flipping halfway through.
If you prefer a firmer bite, chill the scooped dough balls for 15 minutes before dredging and baking.
You can substitute Italian seasoning in the panko mix for extra flavor.
