  • 1 (8 ounce) package cream cheese, softened
  • 1 cup crushed pineapple, well drained
  • 1/2 cup chopped pecans, plus extra for coating
  • 1/4 cup finely chopped green onion
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Instructions

  1. In a medium bowl, beat the softened cream cheese until smooth.
  2. Add the well-drained crushed pineapple, 1/2 cup chopped pecans, green onion, salt, pepper, and garlic powder to the cream cheese. Mix until all ingredients are combined.
  3. Shape the mixture into a ball and place it on a sheet of plastic wrap or parchment paper.
  4. Wrap the cheese ball tightly and chill in the refrigerator for at least 2 hours, or until firm enough to handle. This is a great make ahead party food step.
  5. Spread the extra chopped pecans on a flat plate.
  6. Unwrap the chilled cheese ball and roll it gently in the pecans until the entire surface is coated.
  7. Return the coated cheese ball to the refrigerator until ready to serve.
  8. Serve your easy cheese ball appetizer with crackers or vegetable sticks.

Notes

  • Make sure you drain the crushed pineapple very well; excess liquid will make the cheese ball too soft.
  • For a sweeter flavor, you can add 1 tablespoon of brown sugar to the mixture.
