2 tablespoons olive oil
3 large leeks, white and light green parts only, cleaned and sliced
2 cloves garlic, minced
1.5 pounds Yukon Gold potatoes, peeled and diced
4 cups vegetable broth
1 cup water
1/2 cup unsweetened plain almond milk (or other dairy-free alternative)
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste
Optional garnish: fresh chives, chopped
Instructions
Heat the olive oil in a large pot or Dutch oven over medium heat.
Add the sliced leeks and cook, stirring occasionally, until softened, about 8 to 10 minutes. Do not let them brown.
Add the minced garlic and cook for 1 minute more until fragrant.
Add the diced potatoes, vegetable broth, and water to the pot. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15 to 20 minutes, or until the potatoes are very tender when pierced with a fork.
Remove the pot from the heat. Use an immersion blender to blend the soup until it is completely smooth and creamy. Alternatively, carefully transfer the soup in batches to a standard blender and blend until velvety. Return the blended soup to the pot.
Stir in the almond milk, salt, and pepper. Heat the soup gently over low heat until warmed through, but do not boil.
Taste and adjust seasoning as needed.
Serve the potato leek soup hot, garnished with fresh chopped chives if desired.
Notes
For a richer flavor, you can substitute half of the vegetable broth with chicken broth.
If you prefer a rustic texture, only blend half of the soup and leave the rest chunky.
This soup freezes well for up to three months. Cool completely before storing in airtight containers.
