1 tablespoon olive oil
1 pound smoked sausage, sliced into rounds
1 medium onion, chopped
1 green bell pepper, chopped
2 cloves garlic, minced
1 teaspoon Cajun seasoning (or more, to taste)
1/2 teaspoon dried thyme
1 1/2 cups long-grain white rice, uncooked
3 cups chicken broth
1 (14.5 ounce) can diced tomatoes, undrained
1 cup frozen peas
1/2 cup shredded cheddar cheese (optional)
Salt and black pepper to taste
Instructions
Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add the sliced smoked sausage and cook until lightly browned, about 3 to 4 minutes. Remove the sausage with a slotted spoon and set it aside, leaving any drippings in the skillet.
Add the chopped onion and bell pepper to the skillet. Cook, stirring occasionally, until the vegetables soften, about 5 minutes.
Stir in the minced garlic, Cajun seasoning, and thyme. Cook for 1 minute until fragrant.
Add the uncooked rice to the skillet and stir it with the vegetables for 1 minute to toast it lightly.
Pour in the chicken broth and the can of diced tomatoes (with their juice). Bring the mixture to a boil.
Once boiling, reduce the heat to low, cover the skillet tightly, and simmer for 15 to 20 minutes, or until the rice has absorbed all the liquid and is tender. Do not lift the lid during this time.
Remove the skillet from the heat. Stir in the reserved smoked sausage and the frozen peas. Cover the skillet again and let it stand for 5 minutes to allow the peas to heat through.
If using, sprinkle the shredded cheddar cheese over the top and cover briefly until the cheese melts.
Taste and add salt and pepper as needed before serving this family favorite sausage dinner.
Notes
For a cheesier version, increase the cheddar cheese to 1 cup or add 4 ounces of cream cheese with the broth.
If you prefer ground sausage, use 1 pound of ground smoked or Italian sausage and brown it before adding the vegetables, draining off excess grease.
To make this a Cajun sausage and rice skillet, increase the Cajun seasoning or add a dash of hot sauce during the last step.
