  • 3 lb beef chuck roast
  • 1 large onion, sliced
  • 2 carrots, roughly chopped
  • 2 celery stalks, roughly chopped
  • 1 packet (1 oz) dry onion soup mix
  • 1 packet (0.87 oz) dry beef gravy mix
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • Mashed potatoes, for serving
  • White bread or toast, for serving (optional)

Instructions

  1. Place the beef chuck roast in the bottom of your slow cooker.
  2. Arrange the sliced onion, carrots, and celery around the beef.
  3. In a small bowl, whisk together the dry onion soup mix, dry beef gravy mix, beef broth, Worcestershire sauce, thyme, and black pepper.
  4. Pour the liquid mixture evenly over the beef and vegetables in the slow cooker.
  5. Cover the slow cooker and cook on LOW for 8 to 10 hours or on HIGH for 4 to 5 hours, until the beef is very tender.
  6. Remove the beef from the slow cooker and place it on a cutting board. Shred the beef using two forks.
  7. Skim any excess fat from the surface of the liquid remaining in the slow cooker.
  8. Return the shredded beef to the slow cooker and stir to coat it thoroughly with the rich brown gravy. Let it heat through for about 15 minutes.
  9. To serve this family friendly slow cooker meal, spoon a generous portion of creamy mashed potatoes onto a plate. Top with the shredded beef and gravy. Serve with toast if desired.

Notes

  • For an extra thick gravy, mix 2 tablespoons of cornstarch with 1/4 cup of cold water and stir this slurry into the slow cooker liquid during the last 30 minutes of cooking.
