Make this homemade lemonade extra special with fresh lavender and sparkling water for a refreshing, aesthetic beverage perfect for spring entertaining.

  • 6 large lemons, juiced (about 1 cup fresh lemon juice)
  • 1 cup granulated sugar
  • 1 cup water
  • 1/4 cup dried culinary lavender buds
  • 4 cups cold sparkling water or club soda
  • Fresh mint sprigs, for garnish
  • Lemon slices, for garnish

Instructions

  1. Combine the sugar and 1 cup of water in a small saucepan. Add the dried lavender buds.
  2. Heat the mixture over medium heat, stirring until the sugar completely dissolves. Do not boil.
  3. Remove the saucepan from the heat, cover it, and let the lavender steep for 20 minutes. This creates your lavender simple syrup.
  4. Strain the syrup through a fine-mesh sieve into a bowl, pressing lightly on the lavender buds to extract all the liquid. Discard the buds. Let the syrup cool completely.
  5. In a large pitcher, combine the fresh lemon juice and the cooled lavender simple syrup. Stir well.
  6. When ready to serve, fill the pitcher with ice. Pour in the 4 cups of cold sparkling water. Stir gently to combine without losing carbonation.
  7. Serve immediately over ice in tall glasses. Garnish each glass with a fresh mint sprig and a lemon slice for an aesthetic beverage presentation.

Notes

  • For a stronger lavender flavor, steep the buds for 30 minutes, but taste often to prevent bitterness.
  • If you prefer mint lemonade, substitute the lavender buds with 1/2 cup of fresh mint leaves in the simple syrup step.
  • Chill all ingredients before mixing for the best carbonation retention.
