Instructions

  1. Prepare the marinade: In a bowl, whisk together the lime juice, orange juice, minced garlic, 1/4 cup cilantro, olive oil, soy sauce (if using), cumin, chili powder, oregano, salt, and pepper.
  2. Marinate the steak: Place the skirt or flank steak in a resealable bag or shallow dish. Pour the marinade over the steak, ensuring it is fully coated. Refrigerate for at least 1 hour, or up to 4 hours for deeper flavor.
  3. Cook the steak: Heat a grill or large skillet over medium-high heat. Remove the steak from the marinade, letting excess drip off. Grill or sear the steak for 3 to 5 minutes per side for medium-rare, depending on thickness.
