Easy Make Ahead Tater Tot Breakfast Casserole

Assemble this hearty, cheesy tater tot breakfast casserole the night before for a simple, crowd-pleasing brunch or holiday morning meal.

  • 1 (32 ounce) bag frozen tater tots
  • 1 pound breakfast sausage or bacon, cooked and crumbled
  • 1 cup chopped onion
  • 10 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Grease a 9×13 inch baking dish.
  2. Arrange half of the frozen tater tots in a single layer on the bottom of the prepared dish.
  3. Sprinkle the cooked sausage or bacon and chopped onion evenly over the tater tots.
  4. Sprinkle half of the shredded cheese over the meat and onion layer.
  5. Arrange the remaining tater tots over the cheese layer.
  6. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  7. Pour the egg mixture slowly and evenly over the tater tots in the baking dish.
  8. Cover the dish tightly with foil. You can refrigerate at this point for up to 24 hours for a make ahead breakfast casserole.
  9. When ready to bake, remove the foil and sprinkle the remaining cheese on top.
  10. Bake for 45 to 55 minutes, or until the eggs are set and the tater tots on top are golden brown and crisp.
  11. Let the casserole rest for 5 minutes before slicing and serving.

Notes

  • For an overnight breakfast casserole, assemble all layers except the top layer of cheese the night before. Cover and refrigerate. Add the cheese and bake as directed, adding 5 to 10 minutes to the bake time if baking straight from the refrigerator.
  • You can use ham or turkey sausage instead of pork sausage for variation.
  • This recipe is freezer friendly; cool completely, wrap tightly, and freeze for up to 3 months. Thaw overnight in the refrigerator before baking.
